My husband and I are HUGE peanut butter enthusiasts. One of the first conversations we had, we talked about our love for peanut butter shakes (I never knew anyone else who liked to basically drink liquid peanut butter..he's a keeper!). Our natural/organic diet changes didn't effect much in terms of our love of peanut butter, because natural peanut butter is about as delicious as it gets!

CoCo Bananas was hands down my favorite flavor. It reminded me of eating PB & Banana sandwiches, without the bread and added yummy, yummy chocolate. The natural banana flavor really stood out making this one flavor-packed jar. The saltiness from the farm fresh peanuts was there, complimented by the sweetness of the chocolate and bananas - fantastic! Before the jar was completely empty, I used CoCo Bananas to make truffles; which are posted below.
Choco Choco is a chocolate lovers best friend! Semi-sweet and rich, dark chocolate combined with the all natural peanut butter and wild honey is a really dreamy combination. I used a few graham crackers, spread Choco Choco in between them and ate them for a snack. I think next time, I'll add a toasted marshmallow for a PB Choco Choco S'mores treat!
Did you ever want to just eat unbaked cookie dough? I'm pretty sure we all have wanted to, and most have done it (I know that I have). Cookie Nookie has the all natural peanut butter and wild honey, mixed with chunks of milk chocolate and all natural cookie dough flavor. The cookie dough flavor really stands out in this one, and completely satisfied my raw cookie dough urge. I would use this to make peanut butter cookies or even add to a shake to make a yummy treat. Cookie Nookie was Gabby's (age 5 1/2) personal favorite.
Razzle Dazzle was Ken's favorite flavor. For this combination, the all natural peanut butter and wild honey are mixed with white and semi-sweet chocolate and natural red raspberry flavor. Lily (age 3 1/2) loved this one on sandwiches without any jelly (the raspberry is already in there!) For me, the raspberry flavor was a little intense, and while I didn't mind it, I found this one to be my least favorite flavor. I think Razzle Dazzle would be a good filler for a "crescent roll surprise" type treat. (Crescent roll dough -can, homemade, frozen; filled with a dollop of Razzle Dazzle and baked until dough is golden brown).

As I mentioned before, it has just been too hot here in Ohio to turn the oven on and bake. I wanted to feature the CoCo Bananas, since it was my favorite of all of them. I decided to make PB, bananas and jelly truffles, they were a little messy to form, but totally worth it.
Organic Jelly (or whatever you have on hand)
Melted Organic Chocolate; enough to coat truffles (or again, whatever you have on hand)
Wax paper lined cookie sheet
Ok, for the bad news of this "recipe." I don't have the actual quantity of powdered sugar. (so sorry!)
I poured nearly an entire 16oz. jar of CoCo Bananas into a mixing bowl, and tablespoon by tablespoon I added powdered sugar; mixing well after each addition until the mixture started forming a ball and pulling away from the sides of the bowl. That's how I knew it would be easy enough to roll by hand. **TIP** When rolling the truffles, powder (sugar) your hands so the peanut butter doesn't stick to them.
|In the filling stages, here is where it gets messy!|
Remove from the fridge once it's set up and firm, yet pliable. Peel the flattened peanut butter off the wax paper, add a dot of jelly to the center (1/4 tsp) and fold the edges of peanut butter around the jelly until it's all covered. Once they're all jellied up, place back in the fridge on a wax paper lined cookie sheet and allow to set up again. **TIP** If at any time, the heat from your hands are melting the peanut butter or the atmosphere is too humid, just put the truffles back in the fridge to set up again.
After the rounded (or mostly rounded) truffles are set; use a fork to dip them in melted chocolate, shaking slightly to remove excess chocolate and sit them on the wax paper. Do so for all of the truffles.
